Easy peasy Macadamia nut cheesecake recipe

For those of you who -unlike me- take it seriously in the kitchen, here is a recipe I wanted to share since it was a success in my house, brought by my famous bestie. Of course my part was only the eating one, while she did all the baking (and that will not change). I spent last weekend in my hometown and was leaving on Sunday afternoon so my friend Mònica came to say hi with this delicious cake. I had finished lunch and had dessert but whoooo cares. After feeling already fat, I said yes to coffee&cake to feel even fatter. But let me tell you -no regrets! The only problem is that it does not take lots of effort & time so it's an easy recipe to do for anyone (luckily for me I am too lazy in  the kitchen, so I am super safe). With this cheesecake you can make a good dessert and it can be stored in the fridge for next day! So here is the recipe -cooking with the famous bestieee!


21 1/4 ounces of cream cheese
1/2 caster sugar
1 t.vanilla extract
4 eggs
1/4 sour cream
3 T unsalted butter
+macadamia nuts
+caramel topping/dulce de leche

1. Preheat oven to 325F. Grease a cake tin and line its base and sides with the baking parchment
2. put the crackers/biscuit (crushed), mix the butter until you see consistency. Cover the base of the tin and flatten with a spoon to make a level base, then put the crust down.
3. Mix sugar, cream cheese, vanilla in a bowl and whisk until it gets smooth. Add the eggs, mix in the sour cream until it gets smooth. Add the Macadamia nuts. Pour this mix into the base, and bake for 60 minutes.
4. After that, remove the cake from the tin and leave it to cool, and then leave it for two hours (at least) in the fridge.
5. When everything is set, pour the caramel sauce on the cake and leave it in the fridge for a night or couple of days. 

Now there is no excuse for those who want to make a good impression when having friends over lunch or coffee afternoons!:)
